Sweet and Sour Vegetable Chow Mein - Convention 2017

  1. Fill a large pot with water and bring to a boil. Add bucatini and boil 8-10 minutes. Strain and set aside.
  2. To make sweet and sour sauce combine pineapple juice, rice vinegar, soy sauce, cane sugar, tomato powder, onion slices, garlic and 1/3 cup water in a medium sauce pan. Let boil 15 minutes stirring occasionally. Mix cornstarch and 2 tablespoons of water to make a slurry and add to sauce. Let boil an additional 2 minutes. Strain and set aside.
  3. In a large saute pan add 1/4 cup of oil, garlic, and onions and toast until aromatic. Add 1 cup of water, all vegetables, pineapple, chef's choice seasoning, and cilantro and stir to make sure all get coated. Let simmer about 3-4 minutes or until all water has evaporated.
  4. Add bucatini noodles and stir fry for 4-5 minutes.
  5. Add 2 cups of sweet and sour sauce and let saute an additional 2-3 minutes. Add more sweet and sour sauce if desired. Serve.

Yield: 8 cups
